In the episode 22 of FMA discussion on the Adult Swim boards, somebody said the following:

The other problem with this theory is that the homunculi are named for the seven deadly Sins. Logic should dictate, therefore, that there can only be a maximum of seven homunculi at any given time. So what happens if somebody creates another one on their own when there are already seven existing homunculi.

Unless there is a whole other set named for the seven heavenly Virtues...
